Lysa Huggins
Owner
For Lysa Huggins, Noble by the Sea is rooted in a lifelong understanding of craft, community, and coastal living. Raised in New Brunswick, her early years were shaped by gardens, kitchens, and the rhythms of the sea. Guided by her grandmother’s steady hands and her mother’s cooking, she learned to value patience, stewardship, and the power of local ingredients, lessons that continue to define her approach to hospitality.

In 1997, Lysa became the first General Manager of the newly restored Windsor House, forming a lasting connection to one of St. Andrews’ most historic spaces. Years spent mastering high-end hospitality strengthened her belief that dining should feel both elevated and intimate.

Today, as Owner of Noble, she returns as both host and steward, blending historic charm with a contemporary culinary vision. Her commitment to quality, local sourcing, and genuine warmth ensures every guest experiences the best of Atlantic Canadian hospitality.
Head Chef
Natasha Smith
Born and raised in Charlotte County, New Brunswick, Chef Natasha Smith’s love of food began in a rural kitchen shaped by homegrown ingredients, wild game, and seasonal cooking. Taught to forage by her father and to cook by both parents, some of her earliest memories are of making bread at the family table. By age nine she was participating in farmers markets, later catering with her mother and working summers in a bakery in St. Stephen.

Her professional career began in 2001 at the Fairmont Algonquin Resort, where she worked across restaurant, banquet, and bakery kitchens. From 2012 to 2025, she served as Chef de Cuisine at the Rossmount Inn, refining a style rooted in classical cuisine presented in a way that feels both unique and familiar. While her savoury work is deeply respected, her true passion lies in pastries and desserts.

At Noble by the Sea, Chef Natasha brings decades of experience, regional knowledge, and craftsmanship to a menu that celebrates coastal ingredients with warmth and intention.
